Friends! This recipe is DELICIOUS and a family favorite at our house! I found this fabulous food blogger named Kayla over at parsleyandpepper.com and she has so many great meals! She even does stories as she is cooking which is awesome! Hope you enjoy!!
1lb Ground Beef
¾ Cup Water
2 Tablespoon Taco Seasoning
½ Onion; Chopped
I Cup Frozen Corn
2 Cups Salsa
½ Bell Pepper
1 Tablespoon Green Chilies
3 Soft Tortillas
1 Cup Sharp Cheddar Cheese
Ice Berg Lettuce
1 Tomato; diced
Possible Add Ons:
Sour Cream or Plain Greek Yogurt
Brown the ground beef in a large skillet until cooked through and crumbled.
Add ¾ Cup Water and 2T Taco Seasoning and stir. Continue to simmer while you dice the onion and green pepper then add them to the skillet.
Add in the corn and salsa.
Grease a 9×13 baking dish
Add 3 tortillas cut in half to the bottom in a single layer
Spread half of the beef mixture over the top.
Then sprinkle 1 cup of the cheddar cheese over the beef.
Repeat the above layers once more.
Bake at 350 for 15-20 minutes until the cheese is melted.
Top with shredded lettuce, tomato and whatever other addon’s you wish.
